Prep

  1. Cut veg
    1. Green onion (1), julienne
    2. Cucumber (.5c), julienne
    3. Carrots (.5c), shred
  2. Mix sauce
    1. orange (1tbsp), juice
    2. garlic (2), press
    3. Peanut butter (2tbsp)
    4. Chinese sesame paste (1tsp)
    5. salt (0.5tsp)
    6. sesame oil (1tbsp)
    7. canola oil (1tbsp)
    8. Soy sauce (1tbsp)
    9. rice wine vinegar (2tbsp)
    10. Pasta water (3tbsp)
  3. Set aside
    1. Noodles (250g)
    2. Bean sprouts (.5c)
    3. Toasted sesame seeds
    4. Crushed peanuts

Cook

NOTE: Reserve pasta water (3tbsp)

  1. Noodles
    1. Cook the noodles al dente, reserve water (3tbsp)
    2. Rinse with cold water and drain
  2. Bean sprouts
    1. Blanch boiling water for 15s
    2. Ice bath
    3. Drain
  3. Big bowl
    1. Noodles
    2. Sauce
    3. Veg
    4. Crushed peanuts
    5. Toasted sesame seeds
