- quinoa (0.5 c)
- chickpeas (15 oz)

- ground cumin (0.5 tsp)
- paprika (0.5 tsp)

- olive oil (2 tbsp)
Prep¶
NOTE: Quinoa takes time
- Cook .5c quinoa
- Chickpeas, drain and rinse
- De-seed jalapeno

In food processor
- Jalapeno
- 2 green onion

2 garlic
- Chickpeas

2c spinach

Grate .25c parm
- 1 egg
- Spice mix
- ground cumin (0.5 tsp)
- paprika (0.5 tsp)
- dash salt and pepper
Instructions¶
- Food processor, pulse until fine chopped
- 15oz chickpeas
- 2c spinach
- 2 garlic
- Add then pulse
- quinoa
- Parmesan
- egg
- spices
- Shape into 8 patties, pan fry 3-4m er side
- Serve with yogurt, lemon, pita, tomato, cucumber.
