    • Jalapeno
    • Green onion (2)

    • Parmesan (0.25 c)
    • Plain yogurt (1 c)
  • Middle
    • quinoa (0.5 c)
    • chickpeas (15 oz)
    • pita
  • Staples
    • ground cumin (0.5 tsp)
    • paprika (0.5 tsp)
    • salt and pepper
    • olive oil (2 tbsp)

Prep

NOTE: Quinoa takes time

  1. Cook .5c quinoa
  2. Chickpeas, drain and rinse
  3. De-seed jalapeno
  4. In food processor

    • Jalapeno
    • 2 green onion
  5. 2 garlic

  6. Chickpeas
  7. 2c spinach

  8. Grate .25c parm

  9. 1 egg
  10. Spice mix
    • ground cumin (0.5 tsp)
    • paprika (0.5 tsp)
    • dash salt and pepper

Instructions

  1. Food processor, pulse until fine chopped
    • 15oz chickpeas
    • 2c spinach
    • 2 garlic
  2. Add then pulse
    • quinoa
    • Parmesan
    • egg
    • spices
  3. Shape into 8 patties, pan fry 3-4m er side
  4. Serve with yogurt, lemon, pita, tomato, cucumber.
