Prep¶
- Dice onion (1)
- Juice lemon (1)
- Soak cashews (0.5c+) - depends on blender
- Set aside
- Garlic (4) pressed
- Vegetable broth (1.5c)
- Nutritional yeast (2tbsp)
Cook¶
- If using raw cashews with weak blender, soak overnight
- Large pan over medium to medium-high heat
- Add onion (1) and 1c broth
- Cook 8m until tender - more broth if cooking too fast
- Cook until broth is gone
- Add garlic (4) and cook 2m
- Add to blender
- Pan contents
- 0.5c broth - more later if needed
- Salt (0.75tsp)
- Pepper (0.75tsp)
- Cashews (0.5c+)
- Lemon juice (1tbsp)
- Nutritional yeast (2tbsp)
- Blend on high until smooth. Add if needed ...
- Broth
- Salt, pepper, lemon juice
- Nutritional yeast
- Serve over pasta cooked with salted water
