Prep

Cook

  1. Blind bake pie crust
    • Preheat oven to 375°F.
    • Grease a 9-inch pie dish.
    • Optionally add pie weights or dried beans.
    • Bake until edges starting to brown, about 15-16min.
    • Remove weights.
    • Prick holes all around the bottom crust with a fork.
    • Return to oven 7-8min.
  2. Reduce oven temperature to 350°F.
  3. Mix filling with electric whisk.

    • whole milk (.5c)
    • heavy cream (.5c)
    • shredded cheese (1c)
    • Other mixins (2c, opt)
    • salt/pepper (.25tsp)
  4. Pour filling into cooled crust.
  5. Bake until center is just about set, about 45-55min. Cool 15min.
