Prep

    1. Shrimp (1.5lbs), peel and devein
    2. Tomatoes (14oz)
  3. Lime juice (2tbsp)

Cook

  1. Medium saucepan, heat olive oil (0.25c)
  2. Add onion (0.25c) saute until translucent
  3. Add garlic (1), red pepper (0.25c), several min
  4. Add tomatoes (14oz), shrimp (1.5lbs), simmer until shrimp opaque, 3min
  5. Add coconut milk (1c), Sriracha (2tbsp), heat through, do not boil
  6. Add lime juice (2tbsp), salt and pepper to taste
