Prep¶

Cook¶
- Medium saucepan, heat olive oil (0.25c)
- Add onion (0.25c) saute until translucent
- Add garlic (1), red pepper (0.25c), several min
- Add tomatoes (14oz), shrimp (1.5lbs), simmer until shrimp opaque, 3min
- Add coconut milk (1c), Sriracha (2tbsp), heat through, do not boil
- Add lime juice (2tbsp), salt and pepper to taste
