Prep

  • Dice the onion.
  • If basil, rough chop.
  • Open cans: tomatoes, beans, tomato paste, vegetable broth.

Cook

  1. Soup pot. Medium heat. Olive oil.
  2. Add onion, salt. Cook 7-10m, stirring occasionally.
  3. Add tomato paste. Cook 30s, stirring constantly.
  4. Add tomatoes, vegetable broth. Stir to combine.
  5. Increase heat to medium-high, bring to simmer.
  6. Cook 30m, stirring occasionally.
  7. Let cool few min.
  8. Transfer to blender. Add...

    • unsalted butter (2tbsps)
    • brown sugar (1tsp)
    • pepper
    • basil (opt)
    • salt (opt)
  9. Blend until smooth.
